Do you mean general subject/multi-volume encyclopedias only? Or do you also
mean single subject/single volume works?

I assume you mean the former!

But if not, then (as you likely know already) there are several of the
latter sort; e.g. "Conflict in Korea: An Encyclopedia" (Roots of Modern
Conflict Series) by James E. Hoare, Susan Pares and "The Korean War: An
Encyclopedia" (Garland Reference Library of the Humanities, Vol 872) by
Stanley Sandler (Editor).
